I think the Cadbury mini egg chocolates are probably one of the best treats around during the Easter season. My husband would argue that Reese’s eggs are better but that’s a story for another day.
Today I want to share with you a fun Easter cookie recipe. This recipe is a classic chocolate chip cookie recipe that I grew up making that when mixed with Cadbury Mini Eggs turns into a delicious, soft, and chewy Cadbury Mini Egg Cookie!

Cadbury Egg Cookies
First cream together your butter, sugar, and brown sugar. I like to do this in my mixer since it’s so much easier but you can do it with a hand mixer or by hand if you want.

Once the sugar and butter are creamed together add the eggs and vanilla. Mix it together completely.
Now add the dry ingredients white flour, wheat flour, salt, baking powder and baking soda.
Blend the oatmeal to a finer consistency and add it to the cookie dough. Mix everything together.

Once the dough is completely mixed together add in your Cadburg Mini Eggs.
I used the back of a spoon to crush the eggs into smaller pieces. Plan on using at least 1/2 a bag of mini eggs the more you use the more chocolate egg pieces you will have in your cookies.

Roll the cookie dough into balls and bake on a greased cookie sheet.
Once the cookies are done let them cool, if you can resist the temptation, then enjoy!

Cookies keep best when stored in an air tight container.
Pro Tip: If you don’t want to bake all the cookies right now roll them into balls and freeze them, then you have frozen cookie dough ready to go when you want some fresh baked cookies fast. (Before baking let the cookie dough thaw)
Cadbury Mini Egg Cookies
These Soft and Chewy Cadbury Mini Egg Cookies are a fun Easter treat to enjoy this spring.
Ingredients
- 1 C. Butter, Softened
- 1 C. Sugar
- 1 C. Brown Sugar
- 2 Eggs
- 1 tsp Vanilla
- 1 C White Flour
- 1 C Wheat Flour
- 2 1/2 C Oatmeal, Blended
- 1/2 tsp Salt
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- Cadbury Mini Eggs
Instructions
- Cream together butter, sugar, and brown sugar.
- Add eggs and Vanilla.
- Mix.
- Add all dry ingredients and mix.
- Add Crushed Cadbury eggs and stir in gently.
- Roll into golf ball size balls. Place on a greased cookie sheet.
- Bake at 375* for 6-8 minutes. They will be soft when you pull them out of the oven as they cool they will get more solid.
Notes
You can use all white flour or wheat flour if you want. I just like how the cookies turn out with the mix.
