Candy Cane Cake Mix Christmas Cookies

These candy cane cake mix cookies are quick and easy to make. They are the perfect recipe to make with kids.

I don’t know about you but I’m having a hard time believing that the holiday season is already in full swing.

Each year one of my favorite things to do during the holidays is to make different kinds of cookies. My kids love getting in on the cookie-making action.

One of our favorite types of cookies to make with my kids are cake mix cookies.

Cake mix cookies only require a few ingredients and my kids can pretty much make the cookies on their own. (We are still working on cracking eggs).

Candy Cane Cake Mix Cookies

These cookies can be made in one bowl and only have 4 different ingredients, cake mix, eggs, oil, and candy canes

To start, get two cookie sheet pans and put parchment paper on each pan, set aside. Preheat oven to 350 degrees.

Once you have the oven preheating grab a bowl to put together these cookies. You can probably get them on the cookie sheet before the oven is ready.

Grab a bowl add the box of vanilla cake mix, oil, and eggs and mix together until combined.

Open 7-8 candy canes (you can do more if you want) put them in a ziplock bag and crush them into small pieces.

Once the candy canes are crushed to a fairly small size, add the crushed candy canes to the cookie dough and mix.

Once the cookie dough has been mixed together roll the dough into quarter-sized balls. (I usually just use a regular spoon from my silverware drawer but I have used a 1inch cookie scoop before and it worked really well, here is a link to one from Amazon)

Once you have the dough rolled into balls place the dough on a cookie sheet. Bake for 8-10 minutes.

Bake until edges barely start to brown. The cookies may seem slightly underdone in the middle but when cooled they will be soft and chewy.

Let cookies sit on the cookie sheet for 3 to 4 minutes before moving them to a cooling rack to cool.

Store cookies in an air-tight container for 3-4 days. You can also freeze these cookies if you want to make them ahead and pull them out for the holidays.

Ingredients

  • 1 Box Vanilla Cake Mix
  • 1/2 C. Vegetable Oil
  • 2 Eggs 
  • 7-8 Crushed Peppermint Candy Canes 

Instructions

  1. Preheat the oven to 350 degrees and grab a couple of cookie sheets. Put down parchment paper on each pan, set aside.
  2. In a medium-sized bowl mix together the cake mix, oil, and eggs. Set aside.
  3. Crush the candy canes then add to the cake mixture. Mix together well.
  4. Once everything has been combined, roll the cookie dough into quarter-sized balls and place it on the pan with the parchment paper, and cook for 8-10 minutes, or until very lightly golden on the edges.
  5. Once the cookies are done cooking let cookies sit and cool on the pan for 3-4 minutes and then move to a cooling rack and let cool completely.
  6. Enjoy!

Notes

Cookies keep for several days in an air-tight container. You can also freeze the cookies.
