Carrot Cake Cookies

This recipe is a perfect one to let the kids help you make. First mix all the dry ingredients together in a bowl or mixer.

Add in all of the wet ingredients and mix well. The dough is really runny, similar in texture to cake batter.

You can add raisins to the cookies if you would like. No one at our house likes raisins so they aren’t included in our cookie recipe.

Place scoops of the dough on a greased cookie sheet. The cookies don’t grow very much in size so you can put these cookies closer together.

Bake the cookies at 350 for 10-12 minutes until done. The cookies will be a darker color and have a firmer texture when done.

Let the carrot cake cookies cool while you mix up the frosting.

Mix all of the ingredients together until creamy. Put the frosting into a sandwich bag or piping bag.

Once the cookies are cool pipe the frosting onto the cookies. I like doing a zig-zag design across the cookies so they aren’t covered in to much frosting.

Store the cookies in an airtight container in the fridge. These cookies also freeze really well.
