To make this delicious Asphalt Pie, you will need the following ingredients:

Creating this amazing Asphalt Pie (aka grasshopper ice cream pie) is easier than you might think and the best part you don’t need many ingredients.
You can make this pie using a homemade chocolate cookie crust or you can purchase one. I have done both and the store bought crust makes this dessert even faster to make. The homemade crust is usually a little bit cheaper. They both taste delicious.
Homemade Oreo Cookie Crust
First crush your Oreos (or another brand of chocolate sandwich cookies) I like to crush them in my blender, but you can do it in a food processor, or in a plastic bag.
After crushing the cookies your going to put them in a mixing bowl. Combine the crushed chocolate sandwich cookies and melted butter. Mix until the crumbs are evenly coated with butter. This will serve as the base for your Asphalt Pie crust.
Press the cookie mixture firmly into the bottom and sides of a 9-inch pie dish, making sure it is evenly distributed. Use the back of a spoon or the bottom of a glass to press it down firmly.
Place the Oreo crust in the refrigerator to chill for at least 30 minutes. This will help the crust set and hold its shape.
Making the Pie
While the pie crust chills pull out the mint chocolate ice cream to soften, I usually give the ice cream about 10 minutes to soften, but if it’s been in a deep freezer it might need more time.

Once softened put the ice cream in a mixing bowl and mix together until it’s creamy and smooth like a thick custard. You still want the ice cream to be somewhat frozen while you mix it.
Scoop the mixed ice cream onto your chocolate crust and smooth the top. Put the pie in the freezer to refreeze. It probably takes an hour(ish) for the pie to refreeze. I’m lucky if we leave it in the freezer for 30 minutes.

Sometimes we completely skip this step, but it is better when the ice cream has time to refreeze. If you’re making this dessert for a party you could easily make it a few days before and keep it in the freezer until you need it.
The Pie Toppings
Before serving the frozen mint ice cream treat it’s time to add all the toppings that make this grasshopper ice cream dessert special.
First you’re going to top it with a whipping cream boarder. I love it when I use real whipped cream but most of the time I use cool whip in a spray can (because it’s fast and easy).

After the whipped cream you’re going to chunk up those extra Oreo cookies and add cookie crumbs to the top of the pie.
The last topping the pie gets before serving is a delicious caramel drizzle. Again you can make homemade caramel sauce if you want, I usually use store bought caramel ice cream topping.
Now you’re ready to enjoy this fantastic Oreo and mint dessert.
Left over pie (if you’re lucky enough to have any) can be stored in the freezer for several days.
