Easy Ice Cream Baked Potato Sundae

Inside: A fun and easy Ice Cream Baked Potato everyone will love eating!

As part of our study of the State of Idaho, we enjoyed some baked potatoes and French fries, but the highlight was definitely the Ice Cream Baked Potatoes.

I got the idea for ice cream baked potatoes from the Bosie Westside Drive In where you can buy a baked potato sundae. (It’s on our bucket list to visit!)

Ice Cream Baked Potato

Ice cream baked potatoes are actually really easy to make and delicious.

Ingredients and Supplies

  • Vanilla Ice Cream
  • Cocoa Powder
  • Plastic Wrap
  • Toppings of your choice.
    • Strawberries (we called them tomatoes)
    • Crushed Waffle Cone (we called bacon bits)
    • Fudge Sauce (we called it gravy)
    • Crushed Oreos (olives)
    • Whipped Cream (sour cream)
    • Shredded Coconut (cheese)

Making the Ice Cream Potatoes

For each potato you need a piece of plastic wrap.

Simple scoop as much ice cream as you want onto the plastic wrap (we did about 3 medium scoops of ice cream) and then wrap it up.

Now squish the ice cream scoops into a potato shape.

Put the ice cream potato in the freezer until you’re ready to serve.

Before you serve the potatoes, you’re going to get a large gallon bag and put some cocoa powder in the bag. Take the ice cream potatoes out of the freezer, unwrap the plastic and put the ice cream in the bag (one at a time).

Shake the bag so the ice cream potato is covered in cocoa powder. Take the potato out of the bag, put it on a plate and you’re ready to load it up.

Ice Cream Potato Sundae Toppings

You can pick whatever toppings you want to put on your Ice cream potatoes. Keep it simple with fudge sauce and whipped cream or add additional toppings.

We decided to have toppings that look like what you would put on a potato including:

  • Strawberries (we called them tomatoes)
  • Crushed Waffle Cone (we called bacon bits)
  • Fudge Sauce (we called it gravy)
  • Crushed Oreos (olives)
  • Whipped Cream (sour cream)
  • Shredded Coconut (cheese)

Everyone was able to put on the toppings of their choice and the potatoes all turned out so fun. We all agreed that the sweet ice cream with the light coating of bitter cocoa powder is delicious.

We’ve made these potatoes multiple times and they are such a fun dessert to make with friends at a game night or just because.
