The pie is really simple to make and as long as you have fresh strawberries you probably already have everything else you need to make the pie.

First I make the crust. Put the flour, powdered sugar and softened butter into a bowl. It’s easiest if you have room temperature butter.

If you are like me and always forget to set the butter out to soften stick it in the microwave to soften, just don’t melt it all the way.

Ready to mix pie crust

Mix the crust with your hands until it all starts to stick together. This dough has a stickier texture.

Then press the dough into a lightly greased pan. I like to use a 10″ springform pan but you can easily use a pie tin. Bake the crust.

Creamy Vanilla Custard

While the crust is baking it’s time to make the custard. The custard is simple and quick to make. The hard part is waiting for it to cool.

After the pie crust comes out of the oven and the custard is made it’s time to let everything cool. I usually make the crust and custard the day before I want to eat the pie, but you don’t have to wait that long.

Delicious butter crust

The custard should be cool after about an hour in the fridge. During this time you can slice your strawberries. I like it when the strawberries are thinly sliced, I think it looks prettier and is easier to eat, but you can use whole strawberries if you want.

For this pie, it took 12 strawberries thinly sliced. The number of strawberries you need will change based on how big your pie is and the size of the strawberries.

Now it’s time to assemble the pie. Gently cover the crust with the chilled vanilla custard.

Then starting at the outside edge of the pie start laying out the strawberries. Continue to go round and round overlapping the rows of strawberries slightly.

Once the whole pie is covered with strawberries it’s time to enjoy!

If you eat the pie right after it’s been put together the crust will have a harder more crumbly texture like a shortbread cookie, this is my favorite.

If you let the pie sit for an hour or two the crust will soften, my husband’s favorite.

Fresh Strawberry Custard Pie

This Fresh Strawberry Custard Pie is loaded with fresh strawberries and delicious vanilla custard. 

Ingredients

For the Crust

  • 1 1/4 C. Flour
  • 1/2 C. Salted butter Softened
  • 1/4 C. Powdered Sugar

For the Vanilla Custard

  • 1 C. Milk
  • 2 tsp. Vanilla
  • 1/8 C. Cornstarch
  • 1/2 C. Sugar
  • 2 Egg Yolks
  • 1/2 tsp Lemon Juice

Toppings

  • 10-15 Fresh Strawberries, Depending on size
  • Blueberries, Optional 4th of July twist

Instructions

Crust

  1. In a bowl mix together all ingredients by hand.
  2. Press dough into lightly greased pan. The dough is sticky so it will not roll.
  3. Bake at 350 degrees for 15-20 minutes until edges start to get golden brown.
  4. Cool.
  5. If you aren't using the crust right away once it has cooled completely wrap in plastic.

Vanilla Custard

  1. Warm the milk and 1 1/2 tsp vanilla in a saucepan. You want it warm, not hot.
  2. In a bowl mix together the cornstarch, sugar, egg yolks, lemon juice, and 1/2 tsp vanilla.
  3. Slowly pour the warm milk into the egg mixture while whisking.
  4. Whisk until it's all mixed together.
  5. Pour mixture back into the saucepan and return to heat.
  6. Heat on medium while continuing to whisk until it thickens to a pudding-like consistency.
  7. Remove from heat and pour into a glass bowl.
  8. Cover with plastic pressed against the custard and refrigerate.
  9. Once the custard is completely chilled it is ready to use.

Assembling the Pie

  1. Wash and thinly slice the Strawberries.
  2. Spread the chilled custard over the crust. For my 10" round crust I used all of the custard.
  3. Start covering the pie with strawberries. Start at the outer edge and work your way into the middle until the entire pie is covered.
  4. Enjoy the pie or keep it in the fridge for a couple of hours before serving it!

Notes

Pie will keep in the fridge for a few days. For a fun 4th of July twist add fresh blueberries to the pie. I like to add them in the center of the pie and on top of the strawberries in a few places.
