No-Bake cheesecakes are one of our favorite quick and easy desserts to make for a treat at home or to take to parties and events.

Mango Cheesecake
This Mango cheesecake has a delicious buttery graham cracker crust, a creamy no-bake cheesecake filling, and is topped with fresh mangos.
Easy Graham Cracker Crust
The first step to making this dessert is making the graham cracker crust. You can purchase one if you want but making your own is quick and easy.
Simply crush a package of graham crackers and mix the crushed crackers with melted butter.

The easiest way to crush graham crackers is by putting them in a blender and pulsing it until they are crushed to the consistency you want.
After mixing the crushed graham crackers and butter press it into your pie pan and bake. Let the graham cracker crust cool while you make the creamy cheesecake filling.
No Bake Cheesecake Filling
Cream together powdered sugar, sour cream, cream cheese, and vanilla until smooth. I like to do this in my bosch mixer but you can easily do it with a hand mixer.

After mixing the creamy cheesecake mixture until it’s relatively smooth. Pour the cheesecake mixture into the cooled graham cracker crust.
Fresh Mangoes
Now for the best part the fresh mangoes. Before you can slice them to go on your cheesecake you need to peel the mangoes. Use this simple hack to make peeling the mangoes quick and easy.
I used two mangos sliced in thin strips to make the flower mango on the top of the cheesecake.

Once you have a bunch of thin mango slices start on the outer edge of the cheesecake and lay mangoes going around in a circle making your way to the center.
Be sure to overlap the mangoes to get plenty of fresh mango in each bite and for the beautifully finished cheesecake.

Once you have covered your cheesecake in mangos cover it with plastic and place it in the fridge. The cheesecake is best after chilling for several hours or overnight.
The cheesecake will store in the fridge for several days but remember it’s topped with fresh mangos so don’t let it sit for too long or the mangos will turn.
No-Bake Mango Cheesecake

If you like fresh mangoes you will love this no-bake mango cheesecake.
Ingredients
Graham Cracker Crust
- 1 Pkg (9 Crackers) Graham Crackers
- 6 Tbs Butter, Melted
No-Bake Cheesecake Filling
- 8 oz Cream Cheese, softened
- 3/4 C. Sour Cream
- 3/4 C. Powdered Sugar
- 1 tsp Vanilla
Fresh Mangoes
- 2-3 Fresh Mangoes
Instructions
Gram Cracker Crust
- Crush Graham Crackers and mix together with melted butter.
- Press cracker mixture into a pie pan, making sure to press crackers up the sides of the pan as well as across the bottom.
- Bake for 7 minutes in a pre-heated oven at 375°. Let cool.
No-Bake Cheesecake Filling
- Cream together cream cheese, sour cream, and powdered sugar. Add Vanilla and scrape sides before mixing again.
Fesh Mango Topping
- Wash, peel, and thinly slice the mangoes.
Putting Together the Cheesecake
- Once the graham cracker crust has cooled put the pie together. First, put the no-bake cheesecake filling over the crust and then top it with the fresh mangoes.
- Start on the outside edge of the cheesecake and lay the thin mango slices going around in a circle working your way to the center.
- Cheesecake is best when chilled for several hours before serving.
