There are a lot of mixed feelings about April Fools, I am one of those that love it! Growing up my mom always did some little prank with our lunches or dinner.
It was always so fun and quickly became one of my favorite little holidays.
I am not a fan of most pranks I just like the ones that everyone will be laughing and think is funny.
Most of my favorite April Fools pranks involve food, in a fun and good way.
This year was the first year that my kids were old enough to actually understand and enjoy April fools so we had a quick and easy April fools dinner of Sweet and Sour Cupcakes and Jello Juice!
Meatloaf Cupcakes
The cupcakes are meatloaf for the cake and mashed potatoes for the frosting.
You can use your favorite meatloaf recipe and just bake it in cupcake tins or if you would like the recipe I used is at the bottom of this post.
For the mashed potato frosting you can make homemade mashed potatoes or use instant potatoes.

After the mashed potatoes are ready, add food coloring to make the color of “frosting” you want for the cupcakes.
To frost the cupcakes I used a piping bag and then I added a little drizzle of the sweet and sour sauce.

Our April Fools Dinner
Once dinner is ready, make sure you video the reactions as everyone starts to enjoy dinner.
The juice is funny to watch and the kids usually end up excited to have jello. The funniest reaction can be how excited the kids are that you are giving them cupcakes and not making them eat dinner.
If your kids will be sad not to have cupcakes, make some to have for dessert after they eat the dinner cupcakes.
My kids thought this April fools day dinner was silly which is what I wanted.
As much as I love April fools it’s the silly tricks that everyone loves that make the holiday fun.
Sweet and Sour Cupcakes
These sweet and sour cupcakes are the perfect April Fools Dinner. The cake is made of meatloaf and the frosting is mashed potatoes.
Ingredients
Meatloaf
- 1 lb Ground Beef
- 3/4 C Rolled Oats
- 2 Eggs, lightly beaten
- 1/2 C Finely Chopped Onion
- 1 tsp Salt
- 1/8 tsp Pepper
- 1 tsp Worcestershire Sauce
Mashed Potatoes
- Mashed Potatoes
- Food Coloring
Sweet and Sour Sauce
- 1/2 C Brown Sugar
- 1/4 C Catsup
- 3/4 C Chili Sauce
- 1 tsp Prepared Mustard
- 1 tsp Worcestershire Sauce
Instructions
- Combine all Meatloaf ingredients; mix well
- Form into cupcakes in a greased muffin pan.
- Bake at 350 for about 30 minutes or until done.
- While the meatloaf cooks mix up your mashed potatoes and add food coloring.
- Once the meatloaf is done remove it from the oven. Take each "cupcake" out of the tin and put it on a plate. You can set each meatloaf in a cupcake liner if you want.
- Frost the meatloaf with the mashed potatoes.
- Mix together and heat all Sweet and Sour Sauce Ingredients.
- Optional: Lightly drizzle sweet and sour sauce over the frosted "cupcakes". Save the rest of the sauce to enjoy with your meatloaf.
Notes
I used a Jumbo Muffin Pan it made about 5 cupcakes if you use a regular cupcake pan you will get a couple more cupcakes depending on how full you fill each cupcake.
The meatloaf is a little dry so that it looks like a cupcake. When you eat it you will want to add more of the sweet and sour sauce.
